OVERVIEW
Shui Xian Oolong水仙乌龙
Tea Origin: Wuyishan City, Fujian Province, China

Introduction

Shui Xian Oolong, also known as Narcissus Oolong, is one of China’s most celebrated oolong teas. Originating from the Wuyi Mountains in Fujian Province, this tea has a rich history dating back to the Ming Dynasty. The unique natural geography of the Wuyi Mountains, with its mineral-rich soil and misty, humid climate, imparts a distinctive "rock rhyme" (yan yun) to the tea. Shui Xian Oolong is known for its large, dark green leaves and its deep amber infusion. The production process involves several meticulous steps: withering, tossing, oxidation, rolling, and roasting, each contributing to its robust, full-bodied flavor with floral, woody, and slightly fruity notes.

TEA CULTURE

Shui Xian tea, also known as Narcissus Tea, is a prestigious variety of oolong tea originating from Fujian Province, China. Its history can be traced back over three centuries to the Qing Dynasty, specifically the Kangxi Emperor's reign (1662-1722). Shui Xian tea trees are believed to have been first cultivated in the small town of Daxu in Jianyang County, now part of Nanping City. Over time, Shui Xian tea gained recognition for its distinct aroma, flavor, and health benefits, establishing itself as a hallmark of Fujian's tea heritage.

Legends and Stories

Several fascinating legends surround the origin of Shui Xian tea, enriching its cultural significance. One popular tale dates back to the Qing Dynasty, when a tea farmer from Daxu stumbled upon a peculiar tea plant growing near a temple. The plant, with its twisted and unusual branches, intrigued him, and he decided to transplant it. To his surprise, the tea brewed from this unique plant possessed an exquisite fragrance unlike any other, earning it the name "Shui Xian" (Water Fairy) due to its ethereal quality.

Another legend speaks of a tea master who, upon seeing the tea plant's graceful appearance, likened it to the dancing Narcissus flower, hence another name for the tea: Narcissus Tea. These legends not only add a touch of mystique to Shui Xian tea but also reflect the deep admiration and reverence tea farmers and connoisseurs hold for this remarkable beverage.

Cultural Significance

Shui Xian tea holds immense cultural significance in Chinese tea culture. It is considered one of the "Four Great Bushes" of Fujian oolong teas, along with Tie Luo Han, Da Hong Pao, and Bai Ji Guan. Shui Xian's unique flavor profile, characterized by its rich orchid-like aroma and full-bodied taste, has captivated tea enthusiasts for generations.

The tea's production process is meticulous, involving several steps such as sun-withering, shaking and rolling, and multiple rounds of roasting. This attention to detail ensures that each cup of Shui Xian tea delivers an unparalleled sensory experience. As such, Shui Xian tea is often gifted during special occasions or served to esteemed guests, symbolizing hospitality and respect.

Modern Appreciation

In modern times, Shui Xian tea continues to enjoy widespread popularity both domestically and internationally. Its health benefits, including aid in digestion, weight management, and stress relief, have attracted a new generation of tea drinkers. Many high-end tea shops and specialty retailers now stock a variety of Shui Xian teas, ranging from traditional hand-roasted batches to innovative blends.

Moreover, with the rise of tea tourism in China, visitors to Fujian Province can now witness the entire production process firsthand, from picking the leaves to the final roasting, adding a new dimension to their appreciation for this ancient beverage.
